For some reason, no matter how early we wake up, it's almost a guarantee that the whole family is going to be hungry. We get out of bed and walk as fast as our still half-asleep bodies will take us, straight to the kitchen. Here are the choices: an unhealthy doughnut that I will feel guilty about eating for the rest of the day, not to mention feeling guilty for feeding that to my family, or making something healthy, which will take way too much time for me to do, not to mention I don’t think any of our stomachs can wait that long
Have you ever experienced this feeling, or is it just us? I learned a new and fun way of making something filling, fun and healthy in a short period of time using our jars! Without further ado, we give you easy-peasy pancakes in a jar!
Pancake in a Jar:
1 cup flour
1 TB baking powder
2 TB sugar (organic if possible)
2 TB margarine or butter, melted (organic if possible)
¾ cup milk (any kind of milk)
Blueberries
First, mix together the flour, baking powder and sugar, then add in melted margarine/butter and milk. Stir this until batter forms. Lay blueberries onto the bottom of the jar, then pour pancake batter into the jar until it gets about halfway to the top. (Because the pancake will rise when baking, you don’t wait to fill it all of the way to the top.) Microwave for about 1 minute if jar is small, but if jar is larger, add another 30 seconds. Let it cool, then if you choose to, add more margarine/butter, blueberries and syrup.
